I definitely like your broader interpretation of punk to include Woody Guthrie, Johnny Cash, the Velvet Underground, and the Stooges. It underscores the nature of the "I'll make my music my way" ethos.
I think today's definition of punk is largely tied to bands like the Ramones and the Sex Pistols simply because that is when it really took off as a movement noticed by the general media. As is always the case, the bands who are most celebrated at the forefront of a genre are never the groups who initiated it. Nirvana and Pearl Jam will always be tied to grunge, although they certainly didn't invent it.
